Stir Fry Spinach with Vegetable Medley

Another delicious recipe in the series 'Greens Glorious Greens' is spinach stir fried with zucchini, corn, bell peppers, onions, garlic and baby tomatoes. The spinach is the main feature of this dish but the addition of the vegetable medley compliments it really well and gives it a fresh, bright and light quality.

Spinach Stir Fry with Vegetable Medley

This Spinach Stir Fry with Vegetable Medley is quick and easy to prepare. It’s excellent for one of those lazy days when you want to go meatless and for some of you a new spin on an old time favorite. The only word of caution for the success of this dish is to pay attention to the timing of each step. It is important that the vegetables are not over cooked. They should remain crisp and look bright in color.

Therefore prep all your vegetables ahead of time so that you can move through each step effortlessly. Cut them in even sizes. The zucchini and the bell peppers should be sliced in strips, then cut in small cubes. Slice the baby tomatoes in halves.

A colorfully presented plate is what attracts me to a dish, especially if there's veggies in it, and this one rocks. I so eat with my eyes. Very inspiring.
